CONCURRENT RESOLUTION
         WHEREAS, Texas chefs and restaurateurs are renowned for the
  quality and diversity of their offerings, and through several
  remarkable achievements in 2012, Paul Qui of Austin has secured his
  reputation as one of the most exciting young chefs in the state and
  the nation; and
         WHEREAS, In February 2012, Mr. Qui took the $125,000 grand
  prize in season nine of the Top Chef television show, and in May he
  won the prestigious James Beard Foundation Award as Best Chef in the
  Southwest for his work at the landmark Austin sushi and Japanese
  restaurant Uchi; that same year, he was recognized as one of the
  2012 Empire Builders by Food and Wine magazine; and
         WHEREAS, Born in the Philippines, Mr. Qui was first inspired
  to cook by his grandmother, Lola; he trained in both Japanese and
  classic French cuisine at Le Cordon Bleu in Austin, and after
  beginning as an unpaid intern and working his way up to chef de
  cuisine at Uchi, he became executive chef at Uchi's sister
  restaurant, Uchiko; and
         WHEREAS, Mr. Qui is also celebrated for helping to create one
  of the signature businesses in Austin's thriving food-trailer
  scene, East Side King, which features Korean, Japanese, Filipino,
  and Thai cuisine; at the end of 2012, he and his partner in the
  business, Moto Utsonomiya, expanded their operation to begin
  serving food at the Hole in the Wall, a venerable student hangout
  across from The University of Texas campus; and
         WHEREAS, Through talent, creativity, and hard work, Paul Qui
  has proven himself one of the leading practitioners of his craft,
  earning national recognition for himself and for Austin's dynamic
  culinary community; now, therefore, be it
         RESOLVED, That the 83rd Legislature of the State of Texas
  hereby congratulate Paul Qui on his remarkable achievements as a
  chef and a restaurateur and extend to him sincere best wishes for
  continued success; and, be it further
         RESOLVED, That an official copy of this resolution be
  prepared for Mr. Qui as an expression of high regard by the Texas
  House of Representatives and Senate.
