                                  R E S O L U T I O N
    1-1        WHEREAS, The city of Elgin has long been regarded as the
    1-2  place to go for mouthwatering, delectable barbecue, and as word of
    1-3  its renowned Elgin sausage has spread far and wide across this
    1-4  great land, citizens from all walks of life have been drawn to this
    1-5  charming Central Texas community to sample what many believe to be
    1-6  the finest sausage made in the United States today; and
    1-7        WHEREAS, While many have enjoyed visiting the town of Elgin
    1-8  and its many fine barbecue establishments, still others must
    1-9  satisfy their craving for Elgin sausage by purchasing it at one of
   1-10  the 452 outlets where it is sold; Texans whose business and family
   1-11  obligations have taken them far away from the confines of the Lone
   1-12  Star State can also go about their business contentedly, secure in
   1-13  the knowledge that Elgin sausage can be shipped anywhere in the
   1-14  world; and
   1-15        WHEREAS, In any given week, 65,000 pounds of sausage are
   1-16  produced by Elgin's three sausage plants, who together represent
   1-17  188 years of sausage-producing experience; and
   1-18        WHEREAS, Meyer's Elgin Sausage was declared the "Best Sausage
   1-19  in the State of Texas" by the judges of the Hallettsville State
   1-20  Sausage Championship in 1993, though most people would have a
   1-21  difficult time choosing a favorite among the 11 tasty varieties
   1-22  produced in Elgin; and
   1-23        WHEREAS, A succulent staple in the diet of many Texans, Elgin
   1-24  sausage has helped to put the city of Elgin on the map, and the
    2-1  community thoroughly enjoys its reputation as a barbecue mecca,
    2-2  which it has helped to encourage this year through its sponsorship
    2-3  of the 8th Annual Hogeye Festival; and
    2-4        WHEREAS, Elgin has long been touted as the state's Sausage
    2-5  Capital by such prominent publications as The Wall Street Journal,
    2-6  The New York Times, Texas Monthly, and Texas Highways magazine and,
    2-7  in light of its extraordinary achievements in this regard, it is
    2-8  time to award this community the full recognition it so richly
    2-9  deserves; now, therefore, be it
   2-10        RESOLVED, That the House of Representatives of the 74th Texas
   2-11  Legislature hereby designate the city of Elgin as the Sausage
   2-12  Capital of Texas; and, be it further
   2-13        RESOLVED, That an official copy of this resolution be
   2-14  prepared for prominent display in Elgin as an acknowledgement of
   2-15  the community's distinction by the Texas House of Representatives.
